Your Florentine lunch cannot begin without the crostini with sausage
It’s with the crostini that the Florentine housewives release their creativity. If she is an expert, she invents a vast variety (a variety that usually is accomplished by inventing by mixing flavors in that moment) with a colorful and aromatic result, that makes the palette of a painter envious.
This apparently simple appetizer, made with bread and sausages, demands the right balance of its ingredients to stimulate the palate without being heavy (more than once you can hear a mum saying to her son who throws tantrums “you are a crostino”)!

3 fresh pork sausages
300 gr. stracchino cheese
12 slices home-made bread
The sausages have to be fresh, made just a few days earlier and of pure pork meat! Take of the skin from the sausages, put them in a bowl and mash them together with the stracchino cheese, mix it all together with a wooden spoon.
Cut the home-made bread in slices, not thicker than one centimeter and put them in the oven for about five minutes, till golden on both sides.
Let the slices cool for a bit, and spread the mixture on them, then put them in a hot oven again for another five minutes.
To be served hot with the melted stracchino cheese that smokes!
