The Florentine cuisine as the Tuscan cuisine, in the general sense, famous throughout the world. Its secret is based on its simple and genuine ingredients and also fresh local products. They bring forth the simplicity of the passion for cooking: freshly picked basil, cheese, the excellent cold cuts, home-made bread and lots of others.
Porcini and Ham
A honorable mention in the Florentine cuisine is for the two pearls that come from the hills that surround Florence: the wine and the oil! Ah, the simplicity of a slice of “toasted“ bread with a touch of cold pressed Extra Virgin olive oil, a “sprinkling” of garlic and a dash of salt. This tastes great with a good ‘Chianti’. Can you smell it? Yes? Good. In the meantime we will call the dishes by their real name, you are eating a “fettunta”.
On this page we want to give you some good Florentine recipes, and when it’s possible to suggest which products to use so that you can do this at home, then you can compare the result in with your favorite restaurant in Florence! Your discovery trip of the Florentine cuisine begins with the hors d’ouvres, simple joys to snack on, but prepared with a blow-out of tastes that are going to be like the “fettunta”, the tasty “bruschette” and also the extraordinary cold cuts like the ones from the “cinta senese”.
Panzanella
You are going to have a selection of really particular first dishes, Florence and Tuscany are famous for their hot and cold soups you can choose between: “ribollita”, “panzanella”, “pappa al pomodoro” all based on bread. These are good examples of the simple and rustic cuisine but attention, simplicity does not mean lack of quality. The ingredients are few but it has to be this way, for an excellent result!
And after that? The second courses based on meat (or “ciccia” as we call it!) will delight your palate, but some of you might not like the strong and “particular” taste of some of the spices used with pork, the only advice we can give you is not to be previously influenced. Don’t ask too many questions and try to remember that in these areas we often say “…don’t throw away anything from the pig!...” trust us you won’t regret it. You can also try pheasant, wild boar, the lampredotto (famous “wet” sandwiches) and last but not least the "bistecca alla fiorentina" (steak cooked in the Florentine style) which is one of the “must haves” of the Florentine cuisine.
When you are ordering a ‘bistecca alla fiorentina’ don’t dare ask for it well done or the owner might send you away in a glimpse of an eye! If you manage to remain seated, you can try the delicious side-dishes such as beans all’uccelletto (or uccelletta as its also called) boiled potatoes, fresh beans or chick-peas that accompany your meat dishes.
Cantucci e Vinsanto
Then comes the traditional dessert. If you are in Florence during the carnival you can order the “schiacciata alla fiorentina” (waffles in Florentine style) or the delicious cenci (in Florentine dialect this word also means cloth, patch or rags but don’t worry they are delicious). Maybe you will try our ‘bongo’ that in the rest of the world are called ‘profiteroles’.
If you don’t have much time, try some tasty appetizers made with natural ingredients. Now you just have to choose wine for your dish. Don’t worry, on our homepage there is also a section dedicated to wine, your wine list is just a click away.
